Pancake Day Protein Pancakes Recipe

Today is Pancake Day (also known as Shrove Tuesday), the day before lent kicks in and we get to deprive ourselves of the things we love just to prove that we can...or is that just me?

Personally, this year I am going to give up sugar. I'm talking the white stuff; unrefined, addictive sugar. We all know it's not doing us any good, yet we still can't cut it out!

Back in October I did a whole month clean, with no sugar, no processed food and no alcohol. Everything I ate was clean and natural. I felt amazing by the end of it! My skin was glowing, my hair was shiny and I slept like a baby every night (waking up completely refreshed, such a good feeling!).

To get myself back in the zone (and yet not missing out on Pancake Day completely!) I am making my Pancakes 'protein style'.

These are not only delicious but also high in protein and low in carbs!

Protein Pancakes

    • Minutes to Prepare: 5
    • Minutes to Cook: 10
    • Number of Servings: 4

 

Ingredients
  • 1/2 cup Quaker Oats (dry weight)
  • 1/2 cup hot water (to cook oats)
  • 1/4 cup egg whites
  • 1 scoop low carb protein powder (isolate)
  • 1/4 tsp. ground cinnamon (to taste)
  • Optional: almond or vanilla extract

Directions
1) Mix oats with hot water.
2) Stir and let stand for a couple minutes till fluffy. 
3) Mix protein powder with the eggs and then mix this with the oats.
4) Stir in the cinnamon and almond extract and fry in a hot frying pan with a small amount of coconut oil.
5) Add fruit or almond butter to serve!
